Apple Bacon Panini
So one of my favorite things in the world is a good sandwich. What a beautiful invention. You can serve it cold, hot, toasted, or fried. They can be the staple of a cheap budget or they can be decadent with exotic meats and toppings. Further more they can be healthly enough to be included in any diet or sinful enough to wreck your caloric intake for the entire day. Nonetheless they are wonderfully delightful in any form. As another bonus; bacon. Need I say more.
Ingredients:
2 slices of bacon per sandwich, cut in half
1 medium apple, thinly sliced
2 Tb ginger-ale
2 tsp lemon juice
1/4 cup apple jelly
3/4 tsp tarragon
1 loaf of fresh sourdough bread
1slice of Havarti cheese per sandwich
dijon mustard
butter softened.
Directions:
In a large skillet fry bacon until crisp, remove and place on paper towels to drain.
In a small bowl toss the apples with ginger-ale and lemon juice.
Place jelly in microwave safe bowl and heat on high for 20-30 seconds or until soft. Stir in tarragon.
Spread jelly on a piece of sourdough bread and layer apple and bacon on top. Spread mustard on remain slice of bread. Butter the outside of the bread and cook on panini maker until bread is brown and cheese is melted.
Notes:
I made this for the family on a Friday night for dinner and they enjoyed it so much we had it after church Sunday as well. We have also tried it with whole wheat bread and it was just as good. All the ingredients are cheap except the Havarti cheese. I believe a Swiss cheese would taste just as good for half the price. I myself am going to try it with a extra sharp cheddar. Another interesting fact about this recipe is no one in this family like mustard, but the sweetness of the jelly compensates well. I didn't mind the mildness of the flavor of the mustard.
