I have been trying to add a little more variety to my protein lately and so when I came across this recipe for ground turkey I had to give it a try. I have never used ground turkey before. It was a little harder to work with than ground beef, but once cooked the flavor and texture was equal to the beef.
Ingredients:
1 package of coleslaw
4 tsp sesame seeds
4 tsp lemon juice
4 tsp mustard
4 tsp sesame oil
2 Tbl sriracha chile sauce
2 Tbl honey
2 Tbl soy sauce
1 Tbl red wine vinegar
1/4 tsp salt
1/4 tsp pepper
1 lb ground turkey
Pita Pockets
4-8 oz of feta
1 sliced cucumber
1 thinly sliced red or green pepper
Directions:
1. Mix sesame seeds, lemon juice, mustard, and sesame oil in a bowl. Then toss with cole slaw and set aside.
2. Mix together sriracha, honey, soy sauce, vinegar, salt, and, pepper. Crumble in the ground turkey and mix well. Shape into four patties.
3. Moisten a paper towel with cooking oil, coat a pre-heated grill rack. Grill patties 5-7 minutes per side or until internal temperature is 165 degrees.
4. Slice patties and stuff into warm pita with cucumbers and peppers. Top with coleslaw.
Notes:
Everybody who has tried this has absolutely loved the flavor. The meat is fairly hot (think medium salsa hot) with the sriracha. Staci and Kennedy both added cucumber ranch dressing to theirs and it cooled it off nicely.
