Mini Cookie Hamburger

                                                                   
We did these for the 4th of July this year.  We wanted to make a nice quick and easy appetizer that looked like the perfect BBQ food what we found was these little cookie snacks.
 
Ingredients:
1 box Nilla Wafers
1 box fudge covered cookies (we used grasshoppers and fudge creme Oreos)
1/4 cup coconut
frosting, divided
red and green food coloring

Directions:
1. Add red food coloring to half of the frosting until it appears like ketchup (food coloring paste works best, but regular food coloring will work, it just takes alot.)  Place coconut in a ziploc bag and drop a couple drops of green food coloring in the bag.  Shake well until all the coconut is covered.

2. Take 1 Nilla wafer and using a frosting piping bag, pipe on a circle of white frosting to represent mayo.  Then place fudge covered cookie on top of "mayo". Then sprinkle coconut on top of that for the "Lettuce."  Finally pipe red frosting on the other Nilla wafer and place on top of the lettuce to complete your burger.
