Grilled Chicken and Pear Salad
I made this the other night as part of my weeking new recipe. It was fast, simple and everyone enjoyed it. 4 star recipe.
Ingredients:
4 Boneless Skinless Chicken Breasts
7 cups of Salad Greens (Use your favorite salad greens)
2 oz. Bleu Cheese
2 medium Pears
1/4 cup Thawed Apple Juice Concentrate
2 Tbl Olive Oil
4-1/2 tsp Apple Cider Vingear
1-1/2 tsp Dijon Mustard
1/4 tsp Pepper
Directions:
Grill chicken breast on medium heat until meat thermometer reads 170 degrees.
Arrange salad greens, cheese, and pears on individual plates. Slice chicken and arrange over salad.
Whisk together remaining ingredients and drizzle over the salad.
Notes:
This is a simple recipe that only takes about 20 minutes to make. Adjust the Dijon according to your personal taste. Mustard is not well liked in our family so I use a minium amout of it. I believe adding Mandarin Oranges, Crasins, Strawberries, candied pecans or Feta instead of Bleu Cheese would also be delicious variations.
