Feta Stuffed Steaks
This is one of my wife favorite meals. It is actually her requested Birthday dinner. It is simple recipe that tastes like something you would get at a fancy resturant. If you are a fan of Feta Cheese you will absoulutely love this. 4.5 star recipe.
Ingredients:
Large round steak cut in to 2-3 inch wide strips
6 oz Feta Cheese
1 pk Baby Spinach
12 Kalamata Olives
Olive Oil
Salt
Pepper
Oregano
Basil
Garlic Powder
Directions:
Cut steak into 2-3 inch strips. Sometimes a large round steak is difficult to find, but any flat steak can be used. I actually like to use a good Sirloin if I can find one big enough to stuff. Place meat in plastic wrap and pound flat with a meat mallet. Brush with Olive Oil. Sprinkle Salt, Pepper, Oregano, Basil, and Garlic powder to taste on meat. Let rest for 20 minutes. In the meantime, mix crumbled Feta, one big handful of chopped spinach, and diced Kalamatas together.
Form circle with steak and use toothpicks to hold together. Stuff inside with cheese filling and bake in a covered glass dish at 350 for 15-20 minutes, remove cover and bake another 20 minutes or until steak is done.
Notes:
Great meal served with our favorite asparagus. Black olives can be substituted for the Kalamatas (my wife's preference).
