Grilled Pineapple

In my last post I raved about how much I love grilled pineapple.  So I decided that I would share my desert version of grilled pineapple.  If you want to wow a group of friends or family at a party this is a simple and fairly cheap desert that will please anyone.  The only problem is that you need to have a rotisserie on your grill.

Ingredients:
1 Pineapple
1/2 stick of melted butter (yes the real stuff)
Cinnamon and sugar mixed together.
Vanilla Bean Ice Cream
Caramel topping

Directions:
Cut all the skin off the pineapple and place on a rotisserie spit.  My grill has a separate infrared burner just for the rotisserie.  This make it nice because it heats better but I image it will work with out one.  I place the spit on the grill and then place a baking sheet underneath the pineapple to catch all the drippings.  Baste the pineapple with the melted butter and sprinkle some sugar and cinnamon on top.  continue re-basting throughout the cooking process.  Pineapple will take between 30-45 minutes to cook.  You want to look for the edges to start to brown and the sugar to start to caramelize.  When pineapple is done slice into 3/4 inch slices and sprinkle cinnamon and sugar on top.  Then scoop a large scoop of vanilla bean ice cream on top of the pineapple and cover with caramel topping. Enjoy!
