Ham and Cheese Cannelloni



This recipe was given to me from my mom who I'm sure pirated from somewhere else.  It is simple and can be pre-prepared.  Throw it in the oven when you are ready.  I made this for the first time when we had friends over to eat.  I had never even tried it before.  It worked great and quickly became one of my favorite dishes. 


Ingredients:
1-1/2 cups Ricotta Cheese
2 cups shredded Mozzarella Cheese
1/2 cup Parmesan Cheese
1 egg
8 slices of deli ham
8 egg roll wrappers
1 jar of any Alfredo pasta sauce
any chopped vegetable: spinach, asparagus, broccoli, etc.


Directions:
Mix Ricotta, Mozzarella, Parmesan, egg and 1/2 of the chopped vegetables in a bowl.  Mix thoroughly. 


In a 11x7 glass dish, spoon a couple spoonfuls of sauce into the dish, and spread evenly on the bottom.


Lay out a egg roll wrapper on prep counter and place a slice of ham on it.  Spoon a generous amount of the cheese mixture onto the ham and roll (I find it easier to place the ham and cheese on the bottom 1/4 of the wrapper). Place it into the pan and continue with the remaining wrappers (approx. 8).  Top the Cannelloni with the remaining vegetables and spoon the remaining sauce evenly on the top. 


Bake at 400 for 25-30 minutes or until the sauce is bubbly. 


Notes:
I like to use store bought Alfredo sauce for this recipe for the fact that the creamy texture is ideal.  Homemade Alfredo sauce can be used, but the texture doesn't come out as smooth.  Also my Alfredo sauce is full of butter and cream (yum-yum) and has substantially more fat and calories than store bought.  I also served this with a tomato and basil bruchetta.  I haven't tried it yet, but some grilled chicken would pair well with the ham and bring alittle more protein for those big carnivores.
