For all you healthy people out there, this recipe is for you. I have been watching my waistline as of late and so in an effort to eat better I have found some recipes that have really helped. The worst part about my diet is that I wasn't an unhealthy eater. I was just hungry all the time. So finding food that was filling as well as delicious was important to me. I have lost 65lbs so far all through eating less and exercising more. I say this not to brag (at least not entirely to brag), but to show off some of the recipes that were low calorie and tasty. These are traditional scones that are heavy enough to be a great snack, but with only around 150 calories, they won't wreck your diet. I can't stand the taste of tea, but I'm sure they would go well with a nice cup of herbal tea.
Ingredients:
1 cup oats
1 cup whole wheat flour
1/4 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup flax seed flour
1 cup low fat vanilla yogurt
2 TB canola oil
1/2 pint blueberries (fresh or frozen)
1 tsp lemon zest
Directions:
Put oats in a blender and pulsate blender until oats a chopped into a coarse flour. Then mix remaining ingredients except blueberries with a hand mixer until thoroughly mixed. Hand mix in the blueberries. Spoon the batter on a greased baking sheet and bake for 12-15 minutes at 400 degrees. Makes 9-12 scones.
Notes:
I tried this same recipe omitting the blueberries and lemon zest and adding diced apples, cinnamon, and nutmeg. I imagine any fruit combinations would work well: raspberries, bananas, raisins, pineapple, and so forth.
